Attack of the Killer Tomatoes (and Zucchini) by Leanne Ely, C.N.C.
Zucchini is in all its glory right now. You know what Im talking
about
the endless supply of zucchinis your garden or your gardening
neighbor proudly brings you. There comes a point where the gardening
excess starts to feel a little like your cat producing a gift for you in
the form of a deceased rodent and its all you can do to smile and be
gracious.
But lets not look a gift horse (or neighbor) in the mouth! The lovely
zucchini is a naturally, very low calorie food--only 13 calories per half
cup. Its nutritionally sound with calcium, potassium, an assortment of B
vitamins and beta-carotene all taking up residence in our little squashy
friend. This may all be so, however, there is such thing as
over-saturation when it comes to zucchinis! Just what can you do with all
those squash?
Here are a few ideas:
Grate it and throw it in spaghetti sauce, meatloaf, salads, tuna salad,
coleslaw and pasta salad, even. Try sautéing it all grated up with garlic
and olive oil for a new and different texture.
Stuff it with tomatoes (see below, bet you have those too!), cheese and
some breadcrumbs. Cut it up and make a quiche out of both tomatoes and
zucchiniyum!
Make zucchini bread, zucchini muffins, put grated zucchini in your
pancakes (oh, the kids will LOVE it, lol).
Make a raw veggie platter and cut the zucchini up like little spears to
dunk in dip.
If there is one thing I know about, especially right now as I pick
tomatoes everyday, it is they are prolific. Right after the first few get
ripe, the rest start to get ripe and before you know it, you're trying to
survive the attack of the killer tomatoes!
And while you'll probably never
eat so many tomato sandwiches as right now, how about a
wonderful recipe to help thin the ranks a bit? The added bonus to
this recipe is the incredible health benefits. Did you know that
cooking them more than doubles the phytochemical prevalent in
tomatoes? Lycopene has been found to reduce the risk of prostate
and lung cancer, as well as digestive cancers-stomach, colon,
esophagus, etc. In fact, a study from the Journal of the
National Cancer Institute (December, 1995) showed that men who
consumed ten or more servings of tomatoes or tomato containing
foods, reduced their risk to prostate cancer by a whopping 45%!
That's an incredible number, although now, there is evidence that maybe
tomatoes arent as healthy as originally thought? Who knows. All I know is
if you have tomatoes, you have the beginnings of a great soup!
Try this one out today!
Fresh Tomato Soup
Serves 4
2 teaspoons olive oil
1 medium onion, chopped
5 medium very ripe tomatoes, cored and
cut into chunks
2 cloves garlic, pressed
1 handful fresh basil leaves, chopped
pinch of sugar
2 1/2 cups chicken broth
1/2 cup whole milk (optional)
salt and pepper to taste
4 sprigs flat leaf Italian parsley
In a saucepan, heat the oil over medium heat. Add the onions and cook till
onions are translucent. Add the tomatoes, garlic, basil
and sugar.
Simmer for 10 minutes or so. Stir in the broth, bring to a boil and simmer
for a couple of minutes. Remove from the heat and let cool. If you prefer
creamier soup, blend in a blender in batches otherwise, serve it up, top
with a sprig of parsley and enjoy!

Taking Time for You by Leslie, MissusSmartyPants
Remember the last time you felt really stylish? How long has it been?! You
remember when you knew all the latest styles and trendsand how to wear
them. If you are like many women, it was probably before kids.
Why is it that when we have children, our life suddenly lacks style and we
no longer know what to wear? We put on whatever like our appearance is no
longer important. Of course we love our children, but somehow in the
process of becoming a parent, we miss-place our sense of style.
Of course you are the worlds best mom and have an extremely busy schedule
so dressing stylish may sound frivolous at times. Besides, you have a
budget to think of and anything stylish might not practical enough.
On the contrary, dressing well is very important to who you are as a woman
and a mom! It will help you maintain your sense of identity and lets you
feel good about yourselfthe way others feel about you.
Our daily lives have become juggling actstrying to keep all the pins in
the air without dropping any. This is what moms do. There is no doubt
about it, when you are a mom--life is busy.
Often practicality makes some women give up on style. When babies spit up
on you, there are errands to run, or you have no plans to leave the
houseyou think why even bother? No real need for makeup or dressing well.
Before you know it--practical and then frumpy has taken over your looks
and your life!
The good news is you can have style without it costing much. It has to do
with the right attitude. You can be fashionable and stay on a budget.

When you take time to add a touch of makeup, wear accessories and clothes
right for your body typeyour attitude will be different. You will feel
like you are no longer blending in with the wallpaperyou will find that
