Thai cooking school

Sour curry with crabs

Crabs in Sour Curry

Ingredients
Quantity

medium size fresh crabs

1-2
chili

morning glory cut bite size

2 cups

fresh kaffir lime leaves

2

chicken or vegetable stock

2 1/2 cups

red hot chilies cut in half

sour curry paste

2 tbsp
chili

fish sauce

2-3 tsp
chili

cane sugar

1/2 tsp
chili
tamarind juice
1/4 cup

Preparation

1) Clean the crabs and using kitchen shears cut them into bite size pieces
2) Remove the stems from the kaffir lime leaves and tear them in half

3) In a saucepot boil the stock and then add the curry paste and kaffir lime leaves. Boil 20 seconds.

4) Add the crab without stirring boil until 2 minutes.
5) Add the morning glory boil 20 seconds.
6) Add the fish sauce, sugar, and tamarind juice and let boil another 30 seconds.
7) Serve hot with steamed rice.
