During the next few months, there's at least a chance you can get your hands on some decent tomatoes, preferably home-grown.
This is my favorite Gazpacho -- the best I have ever tasted. Don't be intimidated by the long list of ingredients. Your blender does most of the work.
Note: It is possible to make this gazpacho even if you don't have all the ingredients on hand. It is excellent even without the tarragon and basil. I frequently make it with 1 tablespoon, each, of red wine vinegar and tarragon vinegar. Experiment and perfect it to your taste. Enjoy them while you can: Marinated Cherry Tomatoes and Fresh Tomato Salsa.
