About's New Page Format includes a space to highlight a topic, and for the past few days it has been dedicated to fish, which I find superbly suited to the summer months when the long slow cooking called for by many meat recipes merely overheats the house. Top Picks - Favorite Fish Recipes  from your Italian Food Guide
Italy has thousands of miles of bays, inlets, reefs, and beaches with all kinds of fish to choose from. Some of my favorite recipes.

1) Bottarga
This is salt-cured fish roe, and as Hank Shaw says, it captures the soul of the ocean. Unfortunately it's difficult to find and very expensive too, even in Italy. But Hank gives excellent instructions to help you make your own.

2) Spaghetti alla Bottarga
First of all, what is bottarga? Dried salted tuna roe, and, if it is of good quality, it's a great delicacy that many consider rather randy. Some of the best comes from Sardegna, and here's a pasta sauce for 6.

3) Hanks Sardinian Pasta with Bottarga
This recipe is more complex, and again very good.
