When thinking about going vegetarian or vegan, sometimes we forget that so much of the food we already eat is vegetarian or vegan already. Corn on the cob is one of those foods! Just be sure to use a vegan and dairy-free margarine, then dress up your corn on the cob with your favorite spices. Summer Favorites: Potato Salad
Potato salad is one of those foods that seems to be universally American. Whether you grew up in Florida or Hawaii, you probably ate some variation of potato salad as a kid! Whether you serve it hot or cold, with or without eggs and mayonnaise, a potato salad is a traditional side dish to serve at your barbecue, picnic or just for an everyday lunch. Summer Fruit Pies
Summer is the season to celebrate fresh fruit. I love strolling through the local farmer's markets to pick out my favorite fruits and to admire the sheer beauty and quantity of fresh seasonal fruit. Here are some very summery fruit pie recipes, perfect for a picnic or light dessert. Best enjoyed while sitting on your porch outdoors with a glass of cool iced tea or lemonade!

No-Bake Summer Mixed Fruit Pie When it's too hot outside to turn on the oven, this easy and sweet fruit pie recipe is perfect. Serve chilled and top with whipped cream, if desired. This recipe is vegetarian and vegan.
Fresh Apricot Pie This apricot pie recipe uses fresh ripe apricots, and can be made vegan by substituting margarine for the butter and omitting the egg.
Blueberry and Lemon Pie If you're lucky enough to live somewhere where you can collect fresh blueberries, this is a great way to use them all up. A vegan recipe.
