People, including Italians (in Italy) think of Italy as a country of emigrants, with almost everyone having relatives abroad. What few people realize is that Italy is now on the receiving end, with a great many people coming to do all sorts of things. Some are things Italians no longer want to do, but others may come as a surprise -- Denny Mendez, who was born in the Dominican Republic, became Italian when her mother married and Italian, and subsequently won the Miss Italian pageant.

If you live in (or visit) the heart of an Italian city you might not realize the degree to which Italian cooking revolves around the grill. If you head out into the suburbs, however, come mealtime and especially on holidays or weekends you're certain to smell the rich aromas of grilling meats....

1) La Galleria dei Salumi
Salumi are cold cuts in general -- salami has 2 as -- and with the weather warming they're coming into season: Mortadella or salami for a sandwich, prosciutto to go with melon, and so on. There are many things I have yet to discover, but here are some of my favorite Italian cold cuts.

2) Mousse di Melone
This is quick to do -- I saw a chef prepare it during a cooking show in a matter of minutes a few years ago -- and also quite tasty. Who could ask for more?

3) Insalata di Riso
Rice salad is one of the few Italian rice dishes that works better with parboiled rice than regular rice -- the rice stays firm, and supports the other ingredients better than something with softer grains might. It's one of the finest summer dishes there is.
