This time of year the evenings are beautiful in my region of the United States. At least once a week, I try to get home from my afternoon meetings early. My husband and I throw a picnic into the van, along with the boys and few toys, and head out for a few hours at the lake. Here is a selection of easy weeknight menus for however you choose to enjoy the season.

Enjoy the beautiful weather and take a quickly prepared dinner outdoors. A handful of rosemary almonds to nibble on, cold red pepper bean salad, and a baguette piled high with red-wine vinegar-seasoned tuna salad will get you into the fresh air fast. Carry a bag of Norman vanilla sables with you for a fantastic dessert.
