Beef Kabobs


Chocolate Cheesecake Cupcakes

If you're looking for a fun and healthy meal to grill the whole family will love, look no further than these flavorful Beef Kabobs loaded with fresh vegetables. Serve on a fluffy bed of fast and easy Basic Couscous with Variations (choose your favorite variation!).

Who doesn't love cupcakes? They're so adorable, easy to serve and these Chocolate Cheesecake Cupcakes are simply scrumptious! A dollop of cheesecake filling hides in each chocolatey-rich little cake topped with melted semisweet chocolate chips.

Beef Kabobs

1 cup red wine
1/3 cup sherry
2 tablespoons soy sauce
1 teaspoon sesame oil
1/2 teaspoon freshly grated ginger root
1 cup pineapple juice
1 teaspoon thyme
1 teaspoon rosemary
1/4 cup Worcestershire sauce
1 onion, chopped
1/2 teaspoon ground black pepper
1 1/2 pounds sirloin steak, cut into 1 to 1 1/2-inch cubes
3 tomatoes, cut into wedges
12 whole button mushrooms
1 eggplant, cut into 1 to 1 1/2-inch squares
1 green bell pepper, cut into 1 to 1 1/2-inch squares
1 yellow squash, cut into 1 to 1 1/2-inch squares
  1. In a bowl, combine red wine, sherry, soy sauce, sesame oil, grated ginger root, pineapple juice, thyme, rosemary, worcestershire sauce, chopped onion, pepper. Pour over cubed sirloin steak. Marinate for 2 hours at room temperature.
  2. Alternate the beef on skewers with prepared tomatoes, mushrooms, eggplant, green bell pepper, and yellow squash.
  3. Grill 3-inches from the heat for about 15 minutes, turning frequently and basting with the marinade. (Discard any unused marinade.)
