Let's face it - not all vegetarians are worried about their health, and even those of us that are still want some greasy, hearty down-home comfort food once in a while, whatever that may mean to you. My favorite comfort foods have always been mashed potatoes, vegan mac n' cheese (or ANY cheesey pasta dish that overloads way too many carbs and fat grams!) and nachos with lots of guacamole. Here are some recipes that may help you out when you need some comfort food.
My Favorite Comfort Foods I definitely go for the refined carbohydrates when I want comfort food! Salt, cheese, pasta and avocados (I'm from California!) are my immediate thoughts when I need a pick-me-up meal. Here are a few of my personal favorite comfort food recipes.
Vegan Fettucine Alfredo I have to confess, I didn't go vegan overnight, and fettucine alfredo was the last thing I continued to eat before committing to a fully vegan lifestyle. Thankfully, I've since discovered recipes such as this one, which are just as rich and creamy as the dairy-based alfredos.
Vegan Mashed Potatoes Using a non-dairy creamer instead of soy milk makes this recipe extra rich and creamy. Add a pinch of nutmeg as well if you like. Serve with plenty of vegetarian gravy.
Chocolate Peanut Butter Pie Chocolate is a favorite comfort food for most, but pair it with another comfort food, peanut butter, and you've got one dangerous combination! This vegan recipe can be prepared in just a few minutes, but you do need to chill it before digging in!
Quick and Easy Nachos This is the simplest way I know of to make satisfying nachos. The only thing I'd add to this recipe is a dollop of sour cream, and of course, lots of guacamole! You can use a vegan cheese to make these vegan too.

I am a vegan and my son and husband are vegetarians. Our young son is having a birthday this weekend and we are having a party with our extended family. I am planning on serving all vegan food.
