Those of you who are old enough remember going through Home Ec in junior
high and high school. I remember hating the class—the cooking was boring,
the recipes were gross, my sewing was horrid (and still is). However, the
one thing I did like about the class was that I learned that cooking is
about some very basic principles: when followed, you get a good result,
when you don’t follow them, you don’t.
BUT—not all the time! There are times when you can fly by the seat of your
pants and improvise as you go. And isn’t that exactly what LIFE is all
about? There are foundational principles for making a quality life happen.
I remember when I was experimenting when I was younger with cooking and
everything was over spiced or the wrong seasonings were used. But I
learned as I went that a little thyme in beef stew made for a much more
delicious end result. That when you crush rosemary with your fingers
before adding it to the dish you’re making, you will help release its
flavor.
My cooking improved with experience, education (mostly self-education) and
trial and error. I learned the basics first; then put my own spin on
things. I was persistent, exuberant and dauntless. As a result, I won a
cooking contest way back when, which spurred me on to became a food editor
for a newspaper, then I wrote 5 cookbooks, a NY Times bestselling book,
and begat a syndicated weekly newspaper column, going out to hundreds of
newspapers nationwide. Who knew that my passion would become my career?
This is the very essence of life: it all boils down to a few foundational
principles and making them your own. That’s what I love about cooking--it
might look different at your house, but look at what our lives can become
when we’re willing to take just a few steps in the right direction! A life
unfolds in front of us that we didn’t know we had.
The recipe for life comes through principled living. And once you
understand how those keys unlock your life, you find your own unique set
of ingredients. The spices of life!
Remember this: when you put ACTIVE yeast into a lump of dough, it will
rise!
You have the tools to cook: get in the kitchen of life and get busy.
Here’s an easy dinnertime recipe to get you started—enjoy!
Spicy Lemon Orange Chicken
Serves 4
4 skinless boneless chicken breast halves
1/3 cup red wine
1/3 cup orange juice
1/3 cup lemon juice
4 tablespoons chopped fresh cilantro (reserve 2 tablespoons of the
cilantro)
4 tablespoons chopped green onions (reserve 2 tablespoons of the green
onions)
1/2 teaspoon dried oregano leaves
1 teaspoon ground cumin
1/2 teaspoon salt
1/4 teaspoon crushed red pepper flakes (or less, depending on how spicy
you like it)
Place all ingredients (except the reserved onions and cilantro) in a
large, plastic re-sealable bag and mush together well. Refrigerate at
least 3 hours but no longer than 24 hours.
Preheat the barbecue grill to a medium heat. Cook uncovered for 5 minutes
on each side, turning until cooked thoroughly.
Per serving: 161 Calories ; 2g Total Fat; 28g Protein; 8g Carbohydrate;
trace Fiber; 68mg Cholesterol; 257mg Sodium Food Exchanges: 0 Grain
(Starch); 4 Lean Meat; 0 Vegetable; 1/2 Fruit; 0 Fat; 0 Other
Carbohydrates

Closet Decluttering by Leslie, MissusSmartyPants
If you are like most women, your closet is way too full and you probably
only wear 20% of what hangs in your closet. It’s true, most woman have a
closet full, but nothing to wear! What about the other 80%? It’s mostly
clutter taking up space! If you don’t love it and don’t wear it, it has to
go! (Out of season or special occasion outfits should be moved to the back
of the closet or better yet, another closet all together).
By only having clothes hang in your closet that you wear regularly—you
will have a lot more room and a sense of peace. It’s time to decide what
to do with the shirts and blouses not being worn. Let’s make 3 piles.
(Remember, 15 minutes at a time so you don’t crash and burn!)
Perhaps you are afraid to let go of some of the shirts and blouses for
fear you will have nothing to wear. I promise you, letting go of clothes
you are not wearing will show you what you ARE wearing and help you see
what you do need in your wardrobe! Blessing someone else with clothes not
being worn is a good thing and you will feel better for it.
Start by making 3 piles…
The give away pile will include shirts you haven’t worn for a long time;
it’s probably been a year or more. These shirts and blouses are in still
good condition but you aren’t wearing them--but WHY? Ask yourself these
questions as you examine at each shirt you do not wear:
* Does it fit well? If it feels snug and uncomfortable--it’s too small
and should be given away. If it’s too big and you don’t like it enough to
have it altered—give it away too.
* Does it look good on you? It was a gift but it looks horrible on you
and you’ll never wear it. Don’t feel guilty about not wearing something
that is not right for you. Pass the shirt forward it to someone it WILL
look good on!
* It was on sale and it seemed like a good deal—at the time. You don’t
like the color, style, fit and it doesn’t make you feel pretty. Give it
away! Again don’t let guilt overcome you because you bought something you
have no idea why you bought it in the first place! You are better off
letting go and give it to charity where it will do more good than give you
guilt each morning!
The trash pile is for blouses and shirts that have seen better days. These
shirts are too worn for anyone else to want to wear. Think about these
shirts and blouses--would you purchase them at a second-hand store
yourself? If the answer is “No” then toss them in the trash.
* Is the shirt too worn? Yes, if it has pilled and faded in color.
Yes, if the buttons are missing/cracked and stitching is coming undone.
Also, if the fabric lacks body and is now flimsy in texture—it is too worn
out to keep.
* Stained and dirty? If you are keeping 15 crewneck tees permanently
stained (just in case you decide to wash the car by hand) forget about it!
Deep six these babies into the trash can! No one needs that many “junky”
tees in their closet anyways!
* This one is my pet peeve…perspiration stained tee shirts. C’mon, no one
wants these! Throw these into the trash. Realistically you may only be
able to get one season out of your tees, period. (especially the white
ones)
The last pile is for alterations. These are shirts and blouses you would
definitely wear with some minor alterations (some you may be able to do
yourself).
* Buttons are about to come loose and need reinforcing.
* Hemlines on shirts coming undone or minor underarm holes need
repair.
* Shirts too long (most often the case). Have your shirt length raised
if it is at the point that cuts your body visually in half. Your best
shirt length is generally the top 1/3 of your body’s total length. This
gives a balanced proportion—regardless if you are long or short waisted.
* Sleeves on shirts (and jackets) too long or too short. The proper sleeve
length is at the wrist bone. When wearing a jacket and a long sleeved
shirt together the shirt will “peek” out below the jacket.
How you organize what’s left is up to you. However, I suggest getting
pretty matching hangers and hanging like items together for a more orderly
look. You can take it one step further by making your closet your own
boutique. Hang a picture, a jewelry organizer and paint it a fun color
too!

** Hip Tip for Easy Squash—
I just read the hip tip on throwing squash on the floor to break it up
before baking. For those who don't want that kind of fun: try microwaving
the squash for five minutes or so. Then is should be easy to cut ready for
baking. Or why not just microwave it til it is done? Slice in half, place
on plate cut side down, and turn on!! I always do my squash this way.
Saves on heating up the oven, too!
