Restaurant style Thai curries usually have a deep and complex flavor that comes from slowly simmering a blend of fresh Thai spices, such as galangal, lemongrass, lime leaves, and of course, lots of spicy chilies! You can get a similar flavor by either using a pre-made Thai curry paste (look for this in the ethnic food aisle next to the noodles and soy sauces or at any Asian grocer), or by using similar but more common spices, such as ginger and turmeric. Serve with rice, or, make your curry a bit thinner by adding extra liquid and serve as a soup.
