They said on the news a couple of days ago that this is the earliest Easter in close to a century, and that it won't fall on March 23 for again until something like 2170... We'll be doing things with family on Easter Sunday, but if it's nice on Monday may go for a long walk. Easter Monday, Pasquetta, is traditionally a day city folk head out into the country for a picnic, and since we're already in the country we may just step outside. Once again, Happy Easter to all who celebrate it!

How to Chop Up A Chicken
Though one can buy chicken cut up, it's cheaper to chop a bird up at home, and you can make the pieces the exact size you want. My Father-in-law, who sold poultry, uses just a knife, and his technique is very easy. Just the thing for the back yard grill!

Ossibuchi al Sugo
The best known Italian recipe for Ossibuchi, veal shanks, is probably ossibuchi alla mi***se. One can do other things with shanks as well, however. Stew them with ground beef, for example, and this recipe yields both an extraordinarily satiny pasta sauce and a superb main course. Perfect given the rain and snow we're getting today.

Technique: Chopping Onions and Herbs
Forget blenders and choppers! If the recipe doesn't call for a huge amount, it's quicker and easier to use a knife and a chopping board. And much faster to clean up after, too.

Top Picks - Before Tomato? Tomatoless Italian Dishes  from your Italian Food Guide
Tomatoes, to many, symbolize Italian cooking. Even now, however, there are many tomatoless Italian dishes. Here's a selection to help you choose if you either dislike or are allergic to tomatoes.

1) On About: Foods that Contain "Hidden" Dairy Products
It's (relatively) easy being allergic to some things. Shrimp, for example -- you avoid certain seafood dishes. If you have problems with milk the situation is much more difficult, because it gets slipped into many prepared foods as an ingredient. Ashley Suggests some of the most common culprits.

2) More About: Basic Knife Cuts
There are lots of ways to cut things up. Danilo takes a detailed look at them, with lots of photos. Interesting!

3) Yet more About: Fondant Easter Eggs
If you're dieting, but have a sweet tooth and an eye for the beautiful, you don't want to look at Elizabeth's creation. If you're not, you're in for a treat. Once again, Buona Pasqua!
