from Jolinda Hackett Much of the fun of a vegetarian diet is exploring new foods and cuisines, and creating new dishes to give variety to traditional staples. Quesadillas are really just cheese and flour tortillas, but you can have fun adding different veggies and fillings. Try some unusual salsa recipes to serve them with as well. Ole! |

Mexican quesadillas are quite filling when eaten alone, or you can serve with sour cream and salsa on the side for dipping.
Sure, you can always just chop up some tomatoes, onions and cilantro for your salsa, but these salsa recipes go beyond the basics, while keeping the traditional flavors.
