How Sweet the Potatoes by Leanne Ely, C.N.C.

When you think sweet potatoes this time of year, inevitably you think of
that ooey gooey sweet potato casserole topped with a million little
marshmallows. Maybe that’s your idea of good time, but I know some better
ways to employ a lowly sweet potato!

Did you know that sweet potatoes are simply packed with beta carotene, the
precursor to vitamin A? Yes indeed, twice as much as winter
squashes—that’s a LOT of beta carotene. Not only that, but they’re
friendly on the glycemic index too, making sweet potatoes a good choice
for those watching their carb intakes.

With 3.2 grams of fiber in a 1/2 cup serving, they’re fiberlicious, too!
Let’s eat more of them, shall we? Here is a recipe from my book, Saving
Dinner for the Holidays, with my favorite recipe for sweet potatoes. This
is a savory flavor rather than too sweet and really showcases the
delicious, delicate flavor of our friend the sweet potato:

Roasted Sweet Potatoes and Onions
Serves 12

8 medium peeled sweet potatoes -- cut into 2-inch pieces
4 medium red onions, cut into 1-inch pieces
4 tablespoons olive oil
2 teaspoons lemon pepper
1 teaspoon salt

Preheat oven to 425 degrees.

Combine all ingredients in 2, 13 x 9 inch baking dishes, evenly dividing
up the ingredients. Toss to coat and bake for 35 minutes or so, until the
taters are fork tender and nicely browned.

Here’s another recipe you’ll love:

Sweet Potato Dip
Makes about 2 cups

2 large sweet potatoes, baked, peeled and cooled
2 tablespoons tahini (found in the ethnic section)
Salt and pepper to taste

In a food processor, puree the sweet potatoes with the tahini, salt and
pepper to taste and serve! Delicious with pita bread and veggies!

Do You Have LBD? by Leslie, MissusSmartyPants

Do you have “LBD”? Is it a contagious new strain of the flu? Should you
take something for it? Nah, it’s not a bad thing, a disease or anything
like that…actually it is a good thing that MissusSmartyPants wants you to
catch! “LBD” is fashion lingo for the timeless classic…the “Little Black
Dress”.

Any modern day woman who finds she is always short on time and cash for
clothes-- will find she needs the “Little Black Dress”. It can be an
essential part of her wardrobe and help her out in a pinch! It is a “wild
card” that can be played out again and again when you find yourself
saying, “I have nothing to wear!” Plus, it is really in this fall!!

The popularity of the “Little Black Dress” was credited to the fashion
icon, Coco Chanel back in 1926. That year she created a new “flapper”
dress that debuted in Vogue Magazine. Back then, her design was considered
flashy and shocking because it was a short dress out of a slinky black
jersey. A jersey knit was considered underwear fabric and the color black
was reserved for funerals and nuns! Thank goodness times have changed!

The instant slimming qualities of the “LBD” alone are enough to keep women
relying on such a great basic piece. Black is wardrobe color for most
women, and the “LBD” can make you feel sexy like Audrey Hepburn in “A
Breakfast at Tiffany’s”. What woman doesn’t want to feel like a desirable
goddess?

A woman’s wardrobe must have at least one key piece like the “Little Black
Dress”—because its possibilities are endless! With its classic styling,
you can never be under-stated or over-dressed. The LBD can rescue you when
you find that your “fashionista ways” have taken a back seat to everyday
havoc of kids, schedules and a busy life…not to worry! When you pull out
this perennial favorite, your style is saved once again!

The slenderizing color of black hides body imperfections and always takes
your fashion quotient up a notch or two-- guaranteed! Think of your black
dress as a blank canvas, and you are the artist. With the selection of
colors in your accessories you can create your own look! This is very very
important! Accessorize with colors…have fun here! You can almost never go
wrong!

Here is an example of how to change the look of the “Little Black Dress”--
wear it to the office with a cardigan or blazer over the top, add some
pearls and classic pumps and you have a conservative, polished look. Then,
as quick as you can snap your fingers… you can change the look for an
after work cocktail party. Simply change into some strappy heels, add
dramatic earrings and pull your hair up. Your look has completely changed
with the same dress! You will look amazing and no one will ever know it
was the same dress!

Be sure and catch LBD this fall! This enduring classic is forever slimming
and kind to our feminine figures!

** I had always heard that if one accidentally oversalted soup or stew
that a chunk of potato added (and subsequently removed) would leach away
some of the excess salt. It occurred to me the other day as I was having
a can of prepared soup (yeah, yeah I know -- but it beats a bag of
Doritos) that it might be a good way to remove some of the sodium from
canned soup. Do you think this could help? As a nutritionist, could you
research it? Weird the stuff that pops into my mind at unexpected times
:-) ~MM

It would seem logical that this would work—haven’t tried it and didn’t
find anything that says it would or wouldn’t. So…here’s a challenge to
y’all…give it a try, write in with your findings and let’s help MM out so
she can know if she can somehow counteract some of the salt in her soup!
