Vegetarian chili is a good standby for many occasions: a quick dinner, potlucks and picnics, or if you are new to vegetarian cooking or just plain old don't feel like cooking. With most chili recipes, you can just toss a few ingredients into the pot and let it simmer until you're ready to eat. Plus, vegetarian chili is very high in protein and low in fat. Super Easy Basic Vegan Chili
If you've never made vegetarian chili before, this is a good basic recipe to start with. You can always add extra veggies or spices to spruce it up with, but this recipe is also great as is.
