Top Picks - Favorite Winter Pasta Recipes  from your Italian Cuisine Guide
Italian foods are seasonal, light, refreshing foods in summer to counter the heat, and richer, more substantial foods during the winter to help us keep the chill at bay. Here's a selection of winter pasta recipes I especially like.

1) Assuntina's Acqua Cotta
Acquacotta means "cooked water", and this is a hearty peasant soup that farmhands would eat while out in the fields in the Maremma, a wild section of Tuscany southwest of Siena that extends to the coast and down into Lazio as well. It's one of those recipes with a great many variations. This is from Assuntina, who runs an agriturismo south of Rome.

2) Sbroscia della Vecchia Versilia
This is a rustic squash and cranberry soup from Versilia, the coastal plain north of Pisa. Peasant food at its best!

3) Un Pranzo Versiliese
Other recipes from Versilia, which is in some ways neither fish nor fowl: There are the ports, and the fishermen, but there are also the mountains and everything associated with them, ranging from mushroom through game. In short, an extremely varied cuisine.
