It's been cold and wet in much of Italy this week, with snow advisories in north and south, and to be honest this is the sort of weather that's best handled by building a fire in the fire place and enjoying its warmth. You can do more than enjoy it, however. Bruschetta, bread toasted over the coals, rubbed with garlic, salted, and drizzled with olive oil comes to mind, but there are other things too.

Fagioli al Fiasco: Beans in a flask
Beans cooked in a flask settled into the embers of the fire are the Italian equivalent of Boston Baked Beans, and very fine eating they are. This recipe is in my review or William Rubel's The Magic of Fire, a superb book on hearth cooking that would make a great holiday gift.

Beef and Veal Stews
If you have coals, a stand, and a cast iron or copper pot, you can make all sorts of slow cooking stews in the fireplace, and though you will have to get the hang of temperature regulation, you can put coals on the lid of the pot, thus providing dry heat from above, which will impart flavors that are difficult to get otherwise.

 
Grilled Radicchio
Like many Italian homes not in the cities, ours has a tavernetta with a large fireplace that's perfect for grilling or roasting over the coals. Meats are an obvious choice, but radicchio, a red relative of endive, is delightful. You wouldn't think to grill a salad, but this one does very well, and I think Endive might too.
