Saint Luke is the patron saint of Impruneta, a town a couple of miles from us, and his day was once the occasion for one of the most important Tuscan livestock shows. Now there are tractors on display, a huge market, and an amusement park rather than hundreds of head of cattle; such is progress. But Clelia has had a great time on the rides, and one of the neighborhoods makes great grilled chicken. Who could ask for more?

Vittorio's Grilled Chicken
Vittorio used to man the grill for the cookouts held by Fiesole's Misericordia, and the results rival those of the folks at Impruneta. Very fine eating!

Rosticciana
The other meat they grill at Impruneta is rosticciana, pork spare ribs. A simple concept, and mouthwatering if done with care; the trick is to cook them gently, so the fat renders out while self-basting the meat. Properly done, they're like cherries: you keep asking for more.

 
Not into Grilling? Peposo, Then
Peposo is Impruneta's major gastronomical claim to fame: a peppery stew much loved by Brunelleschi, who discovered it when he was ordering terracotta roof tiles tiles (Impruneta's other claim to fame is terracotta) for Florence's Cathedral. It's a slow-cooked delight.
