BEAT THE HEAT WITH CHILLED SOUPS!
It is swelteringly hot, you are sweating and cranky, and even the dog can't stop panting. Even immersing yourself in the kiddie pool isn't working. How about a nice big bowl of soup to beat the heat! WAIT...soup? You bet! We are talking about a bowl of cool and crisp Chilled Soup, of course! Put all those fresh veggies from the garden to good use by whipping up a batch of Gazpacho. Or how about whipping up some Vichyssoise, a cold potato and leek soup that can be served warm in the wintertime, and is a bit creamier and heavier, but oh so velvety and rich! SCRUMPTIOUS SPRING ROLLS
Looking for a fun and different appetizer to serve at your next dinner party? Why not give homemade Spring Rolls a whirl! Perfect for entertaining because they can be made ahead, and fun for guests since no utensils are required, just a spicy and tangy sauce for dipping. There seems to be a bit of confusion when it comes to the names of the various rolls of Asian cuisine. Egg Rolls are the heaviest roll which are fried and composed of an egg and wheat based wrapper. Spring Rolls are created with less fillings, rolled up in a rice paper wrapper, and are also most often fried. A Summer or Salad Roll is the lightest of all because it is served unfried and cold, also wrapped up in a rice based sheets. Spring Rolls are now the most commonly used term for fried and unfried rolls, both being equally delicious and scrumptious! Which sounds better to you? Try a fried variety one night and opt for a fresh and cold version the next. Feel free to educate your guests on all the different types as well; they'll listen to you forever as long as you keep serving up the rolls!
