Ah, the lazy, hot days of summer! I've been enjoying a bounty of fresh, exotic fruit these days, and I''ve even been having fun trying some new fruits at the market: durian, jackfruit and lychees - yum! Whatever your favorite fruit, here are a few cool, no-bake summer dessert recipes to help you take advantage of the season's bounty. Of course, being fruit-based, they are nutritious and naturally low in fat. And now, I'm off to relax by the pool with an ice blended cocktail. Hope you're doing the same!

No Bake Summer Fruit Pie
Pneapples, peaches and blueberries, oh my! When it's too hot outside to turn on the oven, this easy and sweet fruit pie recipe is perfect. Serve chilled and top with whipped cream, if you'd like. and try using whatever berries grow locally, instead of blueberries, if you'd like. Enjoy! See also: Quick and Easy Pie Crust Recipes

Quick and Easy Strawberry Sorbet
The kids will really like this recipe, and, with just four simple ingredients, you can prepare this sorbet in a jiffy. It does need to be frozen and mixed, though, so it won't be ready right away. It's worth the wait, though, I promise!

Creamy Vegan Ambrosia Fruit Salad
I love a super-cold and super-fresh fruit salad, so I like to chill the fruit first when I make this recipe. Most ambrosia recipes use sour cream or yogurt, which adds some fat, so why not give this healthier vegan version a try?
