Cucumber salad

Cucumber Salad

Ingredients
Quantity

thinly sliced cucumber strips

1 cup
chili

halved cherry tomatoes

fish sauce

2 tbsp

shrimp paste

1 tsp

lime juice or lemon juice

1 tbsp
chili

tamarind juice

1 tbsp
chili

cane sugar

1/2 tsp
chili

fresh red hot chilies (to taste)

5-7
chili

whole garlic cloves

Preparation

    1) Pound the chilies and garlic in a large wooden mortar until crushed.
    2) Add the shrimp paste, fish sauce, lemon juice, tamarind juice and sugar, and mix well.
    3) Add the cucumber and tomatoes, pound gently and mix well. Serve with warm sticky rice, long green beans, white cabbage, and sliced cucumber.
