FROM THE DOLCE VITA KITCHEN
Balsamic Strawberries
Yes, you heard right. Vinegar and strawberries. But not just any vinegar.  Real balsamic vinegar from Modena is a category unto itself. With slow aging - up to 20 years - it takes on an ever-more mellow, viscous character and heavenly caramel overtones.  So ditch the cheap grocery-store imitation and pick up some authentic Modena Balsamic at your specialty gourmet shop. Add a splash in winter soups for a subtle extra dimension. Or try it now with sweet, seasonal strawberries. This dish can stand alone, or it can make a lovely topping for cheesecake, pound cake, or French toast.

Balsamic Strawberries
3 1/2 cups sliced hulled strawberries (about 16 ounces)
1/4 cup sugar
1 1/2 tablespoons balsamic vinegar

Toss all ingredients in medium bowl. Let stand at room temperature until juices form, at least 1 hour and up to 3 hours.

Makes about 3 cups
