Fresh Peas with Prosciutto
This recipe is simplicity in itself. Like so much Italian cooking, it relies on the perfection of its raw ingredients in this case, fresh spring peas. Add some savory prosciutto, fruity extra virgin olive oil, and fragrant onion, and youve got a fast, easy side dish that embodies the essence of springtime.
Fresh Peas with Prosciutto
(Serves 4)
2 tablespoons olive oil
¼ cup diced onion
¼ to ½ cup diced prosciutto
2 cups fresh peas
(can substitute frozen, cooked per package instructions)
Salt and pepper to taste
In a medium skillet, combine olive oil, onion and prosciutto. Cook on medium for 4 to 5 minutes. Stir in peas and cook for 4 to 5 minutes more. (If using frozen peas, cook only 1 to 2 minutes.) Add salt and pepper and serve.
