Fresh Peas with Prosciutto


photoThis recipe is simplicity in itself. Like so much Italian cooking, it relies on the perfection of its raw ingredients — in this case, fresh spring peas. Add some savory prosciutto, fruity extra virgin olive oil, and fragrant onion, and you’ve got a fast, easy side dish that embodies the essence of springtime.

Fresh Peas with Prosciutto
(Serves 4)
2 tablespoons olive oil
¼ cup diced onion
¼ to ½ cup diced prosciutto
2 cups fresh peas
    (can substitute frozen, cooked per package instructions)
Salt and pepper to taste

In a medium skillet, combine olive oil, onion and prosciutto. Cook on medium for 4 to 5 minutes. Stir in peas and cook for 4 to 5 minutes more. (If using frozen peas, cook only 1 to 2 minutes.) Add salt and pepper and serve.
