Indian food is one of my favorite ethnic cuisines, and, despite intimidating ingredients lists, preparing a few simple dishes can be quite easy, even for the novice chef! Sometimes an ingredients list will appear long at first glance, but it's really just the extensive use of spices that make the recipe appear difficult. Each of these recipes uses common ingredients that should be easy to find at most grocery stores. So, fill up your spice rack and explore these simple Indian dishes!

Chana Masala - Spicy Chickpeas with Spinach
Chana masala with spinach is a vegetarian variation of a traditional and popular Indian food dish. If you don't have all the spices on hand, it's ok to omit one of them without too much trouble, but don't omit more than two or you will have a completely different (and bland!) dish on your hands. For a heartier variation, toss in some tofu with the chickpeas and serve over rice.

Aloo Matar - Indian Potatoes and Peas
There are many, many different ways to prepare Aloo Matar, Indian spiced potatoes and peas. Some recipes use a coconut base, and others simmer the potatoes in a tomato sauce. This basic recipe uses a few simple spices for a flavorful and tangy Indian food dish that is both vegetarian and vegan. Serve with rice, if desired.

 
Vegan Palak "Paneer" Creamy Spinach with Tofu
Traditional Indian Palak Paneer is made from a soft cheese that is not aged, called paneer. Many westernized versions of this recipe with use ricotta for a reasonable fascimile.
