Know What’s for Dinner! by Leanne Ely, C.N.C.
If you don’t know what’s for dinner today, welcome to the club—it’s a big
one! 90% of America will not know at 4:00 PM today what they will be
serving in just a few hours. Out of that 90%, some will opt for heating up
a frozen pizza or calling the pizza guy for delivery, some will battle the
crowds and snag a rotisserie chicken at the grocery store, others will
choose the drive thru or go out and the last few will try in vain to put
something together with the odds and ends ingredients in their pantries
and fridges. All of these options have STRESS written all over them.
I’m not saying you can’t do any of these things occasionally; it’s just
that when this becomes the way you do dinner, it’s more haphazard, less
nutritious and way more stressful than it needs to be.
The easy button is your pantry and fridge being properly stocked, your
grocery list being filled out and used when you go to the grocery store so
you can keep your pantry and fridge stocked and of course, having a menu
that reflects your week, so you know what days you can cook and what days
you need help (the days you’re schlepping kids to sports, dance, music
lessons, etc.)
Let me define “help”. Help to me comes in the form of my crockpot, a
frozen dinner that I’ve made thawing in the fridge for that night,
leftovers, sandwiches, breakfast for dinner and a last resort, take out or
the pizza guy. The rest of the time, I make dinner and although it rarely
takes me over 30 minutes to make a meal, the other options I just listed
take half that time and really save me on the busiest nights.
It is just as simple as I’ve outlined it. The very first place to start is
with a menu that reflects your needs, a grocery list to reflect the menu
and a trip to the grocery store!
Today is the day you turn from the world of fast food and repent! Become a
convert…a crock pot convert that is. Use this wonderful apparatus
regularly and watch what happens to that face of yours when your kids ask,
“What’s for dinner?” You will smile because you have an answer! Here is a
great crock pot dinner you will love, and so will the rest of your family!
Crock Moroccan Chicken and Veggies
Serves 6
4 skinless chicken thighs, cut into 1 inch cubes
2 (16 ounce) cans garbanzo beans, drained
1 (15 ounce) diced tomatoes
1 small red bell pepper, de-ribbed, seeded, cut into 1 inch squares
1 cup chopped red onion
1/4 cup raisins
2 tablespoons tomato paste
2 tablespoons water
3 cloves garlic, pressed
2 teaspoons instant chicken bouillon
1 1/2 teaspoons ground cumin
2 tablespoons peanut butter
Hot cooked couscous or brown rice
Place garbanzo beans, tomatoes, bell pepper, onion, raisins, tomato paste,
water, garlic, chicken bouillon and cumin in 5 quart slow cooker. Mix
until well combined.
Place chicken pieces on top of bean mixture. Cover and cook on low heat
setting 6-7 hours, or until chicken is tender.
Before serving, stir in peanut butter. Serve over couscous or brown rice.
Per Serving: 385 Calories; 10g Fat; 27g Protein; 48g Carbohydrate; 9g
Dietary Fiber; 49mg Cholesterol; 670mg Sodium. Exchanges: 2 1/2 Grain
(Starch); 2 1/2
Lean Meat; 1 1/2 Vegetable; 1/2 Fruit; 1 Fat.
SERVING SUGGESTIONS: Add a green salad and some whole grain pita bread.
VEGETARIANS: Skip the chicken and add an extra can of garbanzos.

How to Have Casual Chic Style
To have an effortless, casual chic look takes some effort. The most
important part of casual chic is to learn how to dress casual and NOT look
sloppy. When you build your casual wardrobe on classic pieces, it can come
across as boring …but there are ways to get your chic attitude across in
your casual clothes.
Every woman needs a casual wardrobe. If you are a stay-at-home mom,
retired, work in a casual environment or perhaps you are put together
during the week and look great, but when it comes to weekend wear… you
lack style…then listen up! Regardless of your situation, all women have a
need for casual attire in their wardrobe. What percentage of “casual” you
need depends on your lifestyle. All women want a casual but put-together
look—without feeling like a slob. Casual does not mean you have to look
frumpy!
Here are some ways to show your casual style and look chic:
1. Keep it current. This is the most important part of a casual chic look:
incorporate the current trends into your wardrobe. Update every season
some clothes and accessories. It may be an inexpensive piece of fashion
jewelry (long necklace, cute earrings that match colors in your wardrobe).
Or, try soft layering knits and tees that are so popular. Find out what
the current trends are and add a couple into your wardrobe.
2. Back to basics. Build your casual wardrobe—like any great wardrobe, on
core basic pieces. You know you will always feel like a million bucks when
you have great basics that mix and match with everything you wear.
3. Fit is it. It does not matter if you are a high ranking attorney in a
“power” suit or a stay-at-home mom…the best fitting clothes will always
make you look fabulous! Too baggy or too tight--is a preventable fashion
crime--alter!
4. Dress to the shoes. Make sure you complete your polished casual outfit
with nice casual shoes. Nothing ruins your “put together” look than white
lace-up shoes. I know, I know you love your lace-ups…but think Mr. Rogers
here! Remember, Mr. Rogers would come into his house and get ready to do
his chores? What is the first thing he did? PUT ON his lace-up shoes!!!
Set the tone for a day of tasks and put on your white lace-ups. But, when
you head out in your casual chic style—opt for the complete look with
stylish (yet comfortable shoes or sandals).
5. Stay inside and lock the doors. Baggy sweats and loungewear belong
inside your home ONLY. These are never a fashion statement nor do they
ever show you looking your best. Enjoy the comfort in your own home.
6. Keep them nice and neat. Keep your nice casual clothes separate from
clothes that you wear for planting in the garden or repainting the
kitchen. This is your casual chic wardrobe and the condition of your
clothes should always be well maintained.
7. Avoid Prints. One of the most affordable ways to look up-to-date is to
avoid purchasing too many prints in your wardrobe. A print can very
quickly look so “last year” before the year’s up! You will find yourself
replacing them.
8. Buy quality, not quantity. Buy the best quality that you can afford. It
takes fewer pieces (they mix and match) plus you will get more wear out of
good quality garments (they end up costing less in the long run).
9. Besides jeans. There are other casual options besides jeans everyday!
Consider skirts worn at or just below the knee (avoid any skirts too
long—they have a tendency to look matronly). Other jean alternatives are:
denim skirts, capris and cropped pants. Try different fabrics. Look for
corduroy, gabardine (season-less, can be dressed up or down) Khakis and
twill fabrics in a variety of colors.
10. Only one at a time. Don’t double up on denim or a trend. If you have
on a cute semi-fitted denim jacket, then don’t wear jeans. Instead opt for
khakis or a nice black slack. Don’t wear two trends at one time…let one
item be the focal point of your casual-chic-look.
11. Celebrate with color. When you are dressed casual chic, you have the
option to wear brighter colors than what you could wear in the workplace.
Go for it! Wear a cheery, eye-catching necklace, a fun handbag, and cute
ballet flats, etc.—feel free to express yourself with color!
12. Play dress up. Dress up on occasion— because you feel like it! Wear
something that is dressier than you would normally wear and see what
happens!

* Speaking of frozen fruit and shakes, I've recently found that I can make
craving-worthy desserts by mixing frozen fruit, a little vanilla soymilk
and a few drops of flavoring with my hand blender. By not adding too much
milk, these turn out the consistency of ice cream and we eat them with a
spoon.
Favorites to try - frozen peaches with a few drops of vanilla, frozen bing
cherries with a few drops of almond flavoring and frozen pineapple and
strawberries with a few drops of rum flavoring. We eat these almost every
