  from Jolinda Hackett
I went to my first vegetarian seder several years ago in college. We had matzo ball soup and roasted beets amongst other vegetarian dishes. Instead of the traditional shank bone, the host had drawn a picture to represent the bone. I can't say it was the most traditional seder, because after the meal, we all sat around the piano and sang Beatles tunes. If you want to be able to accommodate your vegetarian and vegan guests at your Passover table, here are some vegetarian Passover recipes that will do the trick.

Beet Casserole
I love beets! This recipe sweetens them up with a bit of sugar and adds just a touch of spices, so the natural flavors really shine through. Beet casserole is the perfect colorful side dish for your vegetarian or vegan Passover or Seder meal.

1) Raw Red Pepper Gazpacho

This flavorful raw food soup recipe is surprisingly filling and flavorful. Red pepper gazpacho soup is best after allowing the flavors to mingle for several hours or overnight, so make in advance. Enjoy room temperature or chilled. Related: More Raw Food Recipes and Resources

2) Vegan Tofu Cheesecake

You won't believe that this easy (and yummy!) blender tofu cheesecake recipe is cholesterol-free and packed full of healthy soy protein. I like to make a peanut buttery Nutter Butter cookie crust and sprinkle some extra cookie crumbs on top. You could also serve with fresh fruit or a fruit sauce. Another idea is to use a pre-made chocolate crust and drizzle the top with chocolate syrup or fudge. This recipe is a tasty way to add more soy to your diet.

3) Black Bean Burgers

I love this recipe for black bean patties because its easy to make as well as tasty, two of my favorite qualities in a recipe! They aren't quite firm enough to toss on the backyard grill, but are good for an everyday meal. This veggie burger recipe is both vegetarian and vegan.
