Greek Style Soft Fried Kalamari
Greek Style Soft Fried Kalamari
2 lbs squid (frozen or fresh)
2 lbs flour
1/2 cup spices (recipe follows)
3 cup very light vegetable oil
2 lemons
Wash squid well, remove head with tenticles, remove and toss spine. Cut in
half, to create 2 rings. drain very well, overnight if possible, or pat
dry with paper towel. Over high heat, in a large fry pan heat oil, dredge
squid in flour well, and place in very hot oil one at a time. It must be
submerged in oil 60-70%. Use tongs to flip squid over. Cook 3-4 min, on
each side. When done, place squid on plate with paper towel. After is
drained well plade it on the serving platter. Cut lemons in half, and
squeeze juice on squid. And then toss spices all over squid.
Note. do not use olive oil. This oil has tooooo strong flavor. Use the
lightest oil you can find and
for the spices mixture use:
2 Tbsp salt
1 Tbsp black peper
2 Tbsp onion powder
1 Tbsp garlic powder
2 Tbsp oregano( crushed in your hands)
any unused portion of spices, flour, or oil, set aside, for a later use
