Apricot Bread
This is a double recipe . I use 8 little 3x5" aluminum foil pans and spray with
the butter/flour spray.
12 - 16 oz. apricots
4 cups flour
2 tsp soda
1 tsp salt
4 Tbsp butter (1/2 stick)
2 cups sugar
2 eggs
1 cup orange juice
nuts
Cover your apricots with hot water and let sit for 30 minutes. Drain and save 1/2
cup of the water for later use. Cut your apricots in small pieces (I use
scissors) and set aside. Sift the flour, salt and soda and set aside. In
another mixing bowl cream the butter and sugar. Add the eggs and beat together
until well blended. Add orange juice and the water from the apricots and blend
all together.. Slowly stir in flour mixture. Mix nuts and apricots with 1 Tbsp
flour ( this will keep the nuts and apricots from "sinking" in the loaf of bread
when baking). Stir them into the batter.. Pour the batter into the prepared pans
and bake in 300* oven until tooth pick comes out clean. The time will depend on
the size of pans you use. Let bread cool in pans for 10 minutes and then tip out
of pans onto rack and finish cooling.
