On December 8th the Church celebrates the Virgin's Immaculate Conception, and in Italy the day is a holiday, much to the delight of school children and those who can stretch a weekend of skiing. The holiday itself? The idea that the Virgin was untainted by sin surfaced early on, and with some Churchpeople supporting it and others not; in 1439 the Council at Basel decided it didn't clash with the Faith, and in 1709 Clement XI made the Immaculate Conception a holy day of obbligation. It didn't become dogma, however, until 1854, when Pius IX issued a bull making it dogma.

How to make Sugo alla Bolognese
Actually, ossibuchi al sugo, which are veal shanks stewed in a sugo alla bolognese, or meat-based wintery pasta sauce. If you omit the shanks you'll have a wonderful pasta sauce, and be a hit with all your friends. If you don't, you'll have a superb second course too, and when it's gone your friends will demand you make more.

And if you make a lot of bolognese sauce following the steps set out above, you can freeze some and have there main ingredient necessary to make Lasagna for your holiday table. Again, very good, and you do risk people clamoring for more.

 
Brasato al Barolo
This is one of my favorite winter recipes, in large part because I can simply set it over a low flame and get back to work, getting up every hour or so to check on it, but not worrying much between glances. And it's good! Especially with polenta.
